Ferran Adrià

Chef-patron of elBulli restaurant visited Toronto October 10

Ferran Adria & Alison FryerThe event with Ferran Adria was thrilling for a number of reasons. Obviously meeting anyone who is at the top of his field always generates excitement. Ferran was an interesting mix of a person who has to control his environment -- witness the last minute change of format -- yet still manages to seem somewhat bemused to find himself the most revered culinary figure of his generation. While he may experiment with food in ways that earlier chefs would never have dreamed, Ferran Adria is still aware that any restaurant is only the absence of a dishwasher away from disaster. It was a reminder to chefs everywhere that ability to create excellent food is only a small part of what makes a great restaurant experience for paying customers.

It was wonderful to be part of a roomful of giddy adults, with anticipation levels akin to Christmas Eve and the arrival of Santa Claus. It speaks well for the future of the restaurant business in Toronto that so many culinary students attended. Liaison College, Hamilton, in particular, made a real effort to give as many students as possible an opportunity to hear Chef Adria.

A Day at elBulliThat The Cookbook Store was the first stop on Chef Adria's North American tour was a huge thrill in itself -- the culmination of 25 years of hard work through thick and thin. The turnout, the gratitude of the audience, and the respect of the publishers from London and New York made up for those times when The Cookbook Store has been overlooked or has lost out to larger venues.

The only disappointments were that Kathryn O'Hara was not able to do a real interview. She would have teased out information which might seem insignificant to Chef Adria but which would have offered insights to the audience. Inspirational was the most oft heard word to describe the event and Chef Adria and we look forward to bringing more international chefs and authors to Toronto.
