Spain & Portugal
Postcards from Portugal
Tessa Kiros
Never have olive oil-slicked salt cod, calamari, and rabbit looked so seductive as they appear in the fourth book from Tessa Kiros. Fascinated with the concept of food as national identity, Kiros has previously celebrated the Cypriot/Finnish meals of her parents and the Tuscan food of the home where she is raising her own family (Falling Cloudberries, $45.00; Twelve, $34.95; Apples for Jam, $45.00) . Here, against a blue and white backdrop, she serves up the classic dishes of Portugal amongst photographs that capture the essence of the country from sea to table. Superb colour photos. Hardcover, 254 pp, $45.00.
1080 Recipes
Simone Ortega & Ines Ortega
1080 Recipes can be seen as Spain's version of The Joy of Cooking - lots of recipes for foods that any household in Spain might prepare. Simone Ortega, an established food writer and expert in Spanish cuisine, wrote this book over thirty years ago; only now is it available in English. Whether you want a simple potato tortilla, almond-filled Santiago torte, or more impressive squid in its ink and rice, this book will tell not only how to make the dish but also how to prepare the more unusual ingredients, such as squid ink. The colourful hand-drawn illustrations add a quirky touch, and the colour photographs show what you can make. Hardcover, 975 pp. $49.95.

The growing year has been lovingly documented through recipes and photos, and just as well as the East End allotments were slated to be bulldozed in 2007 to make way for the 2012 Olympics. Uma Casa Portuguesa
It can be difficult to find anything on the food and cooking of Portugal but this volume has filled the need for authentic Portuguese cooking for years now. Unsurprisingly seafood is featured in many of the dishes and there are several recipes for salt cod, the traditional staple of the nation. There are also a fair number of recipes for small game including rabbit and partridge, and, of course, a liberal use of pimento paste and spanish paprika. Colour plates. Softcover, 208pp, $19.95.
