Winning Apple Pie Recipe from our first Apple Pie Contest 2011

Pie Crust

4 cups cake and pastry flour
2 cups shortening
1/2 tsp salt
1 egg, lightly beaten
1 tsp white vinegar
cold water

Combine four, shortening and salt with a pastry blender just until combined.
In a one cup measuring cup, add eggs and vinegar. Top to the 1 cup line with cold water. Add this to your mixing bowl. Mix until smooth and add flour if dough appears too wet. Divide into two and flatten into two disc shapes. Chill for at least 30 minutes.

Apple Pie Filling

5 cups wealthy apples, peeled, cored and sliced 1/4 inch
2 Tbsp lemon juice
3/4 tsp ground cardamon
2/3 tsp ground cinnamon
1/2 tsp sea salt
1/4 cup Siloam Orchards apple blossom honey
4 Tbsp whole wheat flour

Add lemon juice to apples as cutting to avoid browning. Once all apples are cut, add ground cardamon, ground cinnamon, sea salt, apple blossom honey and whole wheat flour.

Pre-heat oven to 375F.

Roll out dough for a 9" pie plate. Fit into the bottom of the pie plate and add apple pie filling, place upper crust on top of the pie. Cut into the middle of the top crust for steam vents. Crimp and flute the edges.
Brush crust with lightly beaten egg.

Bake in 375F degree oven for 1 hour.
